- 100 g fresh green asparagus spears trimmed and cut
- 50 g white button mushrooms sliced
- 2 piece large eggs
- 30 ml whole milk
- 10 g unsalted butter
- 30 g yellow onion diced
- 1 piece garlic clove minced
- 15 g grated parmesan cheese
- 5 g fresh parsley chopped
- 1 pinch salt
- 1 pinch ground black pepper

Instructions
- Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit).
- Wash asparagus spears, trim tough ends, and cut into 2 cm pieces.
- Clean mushrooms with a damp cloth and slice thinly.
- In a medium ovenproof skillet, melt unsalted butter over medium heat.
- Add diced yellow onion and minced garlic clove to the skillet and cook until softened, about 3 minutes.
- Add sliced mushrooms and asparagus pieces to the skillet and cook for 5 minutes until tender.
- In a bowl, whisk together large eggs, whole milk, grated parmesan cheese, salt, and ground black pepper until smooth.
- For the egg mixture evenly over the vegetables in the skillet.
- Cook on the stove over low heat without stirring for 3 minutes until edges start to set.
- Transfer the skillet to the preheated oven and bake for 10 minutes until the frittata is fully set and lightly golden on top.
- Remove from oven and let rest for 2 minutes.
- Sprinkle chopped fresh parsley over the frittata before serving.
