- 50 g dark chocolate 70% cocoa
- 100 ml heavy cream cold
- 10 g granulated sugar
- 1 piece large egg white fresh
- 10 g unsalted butter softened
- 20 g all purpose flour
- 5 g cocoa powder unsweetened

- Preheat oven to 180 degrees Celsius (350 Fahrenheit).
- Line a small round cake pan with parchment paper.
- In a bowl, melt dark chocolate and unsalted butter together over a double boiler until smooth.
- In another bowl, whisk large egg white until soft peaks form.
- Gradually add granulated sugar to egg white while whisking until stiff peaks form.
- In a separate bowl, sift all purpose flour and cocoa powder together.
- Fold melted chocolate mixture gently into egg whites.
- Add sifted flour and cocoa powder mixture to chocolate and egg whites, folding carefully to combine without deflating.
- For batter into prepared cake pan and bake for 12 minutes or until a toothpick comes out clean.
- Remove cake from oven and let cool completely in pan.
- In a chilled bowl, whip heavy cream until soft peaks form.
- Spread whipped cream over cooled cake evenly to create mousse layer.
- Refrigerate cake for at least 2 hours before serving to set mousse.
