  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 90 ml whole milk
  • 0.5 piece large egg
  • 15 g unsalted butter melted
  • 0.5 teaspoon vanilla extract
  • 80 g fresh strawberries sliced
  • 60 ml whipping cream heavy
  • 10 g powdered sugar

  1. In a medium bowl, whisk together all purpose flour, granulated sugar, baking powder, and salt until combined.
  2. In another bowl, beat the large egg lightly, then add whole milk, melted unsalted butter, and vanilla extract; mix well.
  3. For the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix, some lumps are fine.
  4. Heat a nonstick skillet over medium heat and lightly grease with butter or oil.
  5. For about 60 ml of batter onto the skillet to form a small pancake; cook until bubbles form on the surface and edges look set, about 2 minutes.
  6. Flip the pancake and cook the other side for 1 to 2 minutes until golden and cooked through.
  7. Repeat to make 4 pancakes, stacking them on a plate to cool slightly.
  8. In a chilled bowl, whip the heavy whipping cream with powdered sugar until soft peaks form.
  9. Place one pancake on a serving plate, spread a layer of whipped cream, then add a layer of sliced fresh strawberries.
  10. Repeat layering with remaining pancakes, whipped cream, and strawberries, finishing with strawberries on top.
  11. Refrigerate the layered pancake cake for at least 30 minutes before serving to allow flavors to meld.
