  • 200 g zucchini medium chopped
  • 50 g onion yellow diced
  • 1 piece garlic clove minced
  • 10 g unsalted butter
  • 250 ml vegetable broth low sodium
  • 50 ml whole milk
  • 1 teaspoon curry powder
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Wash and chop the zucchini into medium pieces.
  2. Dice the yellow onion finely.
  3. Mince the garlic clove.
  4. In a medium pot, melt the unsalted butter over medium heat.
  5. Add the diced onion and minced garlic to the pot and cook until soft and translucent, about 5 minutes.
  6. Add the chopped zucchini to the pot and stir to combine with the onion and garlic.
  7. Sprinkle the curry powder, ground cumin, and ground coriander over the vegetables and stir for 1 minute to release the spices' aroma.
  8. For in the vegetable broth and bring to a boil.
  9. Reduce heat and simmer for 15 minutes until the zucchini is tender.
  10. Remove the pot from heat and use an immersion blender to puree the soup until smooth and creamy.
  11. Return the pot to low heat and stir in the whole milk.
  12. Season with salt and ground black pepper to taste.
  13. Heat the soup gently for 2 more minutes without boiling.
  14. Serve the creamy zucchini soup warm, garnished if desired.
