- 200 g zucchini medium chopped
- 50 g onion yellow diced
- 1 piece garlic clove minced
- 10 g unsalted butter
- 250 ml vegetable broth low sodium
- 50 ml whole milk
- 1 teaspoon curry powder
- 0.5 teaspoon ground cumin
- 0.5 teaspoon ground coriander
- 1 pinch salt
- 1 pinch black pepper ground

- Wash and chop the zucchini into medium pieces.
- Dice the yellow onion finely.
- Mince the garlic clove.
- In a medium pot, melt the unsalted butter over medium heat.
- Add the diced onion and minced garlic to the pot and cook until soft and translucent, about 5 minutes.
- Add the chopped zucchini to the pot and stir to combine with the onion and garlic.
- Sprinkle the curry powder, ground cumin, and ground coriander over the vegetables and stir for 1 minute to release the spices' aroma.
- For in the vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes until the zucchini is tender.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth and creamy.
- Return the pot to low heat and stir in the whole milk.
- Season with salt and ground black pepper to taste.
- Heat the soup gently for 2 more minutes without boiling.
- Serve the creamy zucchini soup warm, garnished if desired.
