- 100 g penne pasta dry
- 50 g carrot peeled diced
- 50 g zucchini diced
- 40 g red bell pepper diced
- 1 piece garlic clove minced
- 10 g unsalted butter
- 10 g all purpose flour
- 150 ml whole milk
- 15 g parmesan cheese grated
- 10 ml olive oil extra virgin
- 1 pinch salt
- 1 pinch black pepper ground
- 5 g fresh parsley chopped

Instructions
- Bring a large pot of salted water to a boil.
- Add penne pasta dry to boiling water and cook until al dente, about 10 minutes.
- Drain pasta and set aside, reserving some pasta water.
- Heat olive oil extra virgin in a large skillet over medium heat.
- Add garlic clove minced and cook until fragrant, about 1 minute.
- Add carrot peeled diced, zucchini diced, and red bell pepper diced to skillet and cook until tender, about 5 minutes.
- In a separate small saucepan, melt unsalted butter over medium heat.
- Whisk in all purpose flour and cook for 1 minute to form a roux.
- Gradually whisk in whole milk, stirring constantly until sauce thickens, about 3-4 minutes.
- Remove sauce from heat and stir in parmesan cheese grated until melted and smooth.
- Add cooked vegetables and pasta to the sauce, tossing to combine.
- If sauce is too thick, add reserved pasta water a tablespoon at a time to loosen.
- Season with salt and black pepper ground to taste.
- Garnish with fresh parsley chopped before serving.
