- 40 g powdered erythritol sugar substitute for icing
- 10 ml unsweetened almond milk
- 0.5 teaspoon vanilla extract pure for icing

Instructions
- Preheat oven to 175 degrees Celsius (350 degrees Fahrenheit).
- In a mixing bowl, cream together the softened unsalted butter and granulated erythritol until light and fluffy.
- Add the large egg white and pure vanilla extract to the butter mixture and mix well.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and fine salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
- Roll the dough into a ball, then flatten slightly and wrap in plastic wrap.
- Refrigerate the dough for 30 minutes to firm up.
- On a lightly floured surface, roll out the dough to about 0.5 cm thickness.
- Cut out cookie shapes using cookie cutters and place them on a baking sheet lined with parchment paper.
