- 150 g guinea fowl breast skinless
- 15 g unsalted butter
- 1 piece shallot minced
- 50 ml dry white wine
- 100 ml heavy cream
- 1 pinch saffron threads
- 50 ml chicken broth low sodium
- 1 pinch salt
- 1 pinch black pepper ground
- 10 ml olive oil extra virgin

Instructions
- Pat dry the guinea fowl breast with paper towels.
- Heat olive oil in a skillet over medium heat.
- Add guinea fowl breast and cook for 5 minutes on each side until golden and cooked through.
- Remove the guinea fowl from the skillet and set aside to rest.
- In the same skillet, add unsalted butter and melt over medium heat.
- Add minced shallot and cook for 2 minutes until translucent.
- For in dry white wine and simmer for 3 minutes to reduce slightly.
- Add chicken broth and saffron threads, stir and simmer for 5 minutes.
- For in heavy cream and stir well, simmer for 5 minutes until sauce thickens.
- Season the sauce with salt and ground black pepper to taste.
- Return the guinea fowl breast to the skillet and coat with the creamy saffron sauce.
- Cook for 2 more minutes to warm through and blend flavors.
- Serve the guinea fowl breast topped with the creamy saffron sauce immediately.
