  • 30 g yellow onion diced
  • 1 piece garlic clove minced
  • 250 ml vegetable broth low sodium
  • 50 ml whole milk
  • 30 ml heavy cream
  • 1 pinch salt
  • 1 pinch black pepper ground
  • 1 pinch ground nutmeg

  1. Wash and trim the green asparagus spears, cutting into 2-inch pieces and reserving some tips for garnish.
  2. Heat unsalted butter in a medium saucepan over medium heat until melted.
  3. Add diced yellow onion and minced garlic clove to the pan and cook until softened and translucent, about 3 minutes.
  4. Add the chopped asparagus pieces (except reserved tips) to the pan and cook for 2 minutes, stirring occasionally.
  5. For in the low sodium vegetable broth and bring to a boil, then reduce heat and simmer for 10 minutes until asparagus is tender.
  6. While soup simmers, blanch reserved asparagus tips in boiling water for 1 minute, then drain and set aside for garnish.
  7. Use an immersion blender or transfer soup to a blender and puree until smooth and creamy.
  8. Return soup to the pan and stir in whole milk and heavy cream, heating gently without boiling.
  9. Season soup with salt, ground black pepper, and a pinch of ground nutmeg to taste.
