- 250 ml whole milk
- 1 piece large egg yolk
- 25 g granulated white sugar
- 10 g cornstarch
- 0.25 piece vanilla bean pod split and seeds scraped
- 1 piece lemon peel strip (no white pith)
- 1 pinch ground cinnamon

Instructions
- For whole milk into a medium saucepan.
- Add the split vanilla bean pod and lemon peel strip to the milk.
- Heat the milk mixture over medium heat until it is hot but not boiling, then remove from heat and let it infuse for 10 minutes.
- In a separate bowl, whisk together the large egg yolk, granulated white sugar, and cornstarch until smooth and pale.
- Remove the vanilla bean pod and lemon peel from the milk.
- Gradually For about half of the hot milk into the egg mixture while whisking constantly to temper the eggs.
- For the tempered egg mixture back into the saucepan with the remaining milk.
- Return the saucepan to medium-low heat and cook, stirring constantly with a wooden spoon or whisk, until the mixture thickens and coats the back of the spoon (about 5-7 minutes).
- Remove the custard from heat and strain it through a fine mesh sieve into a clean bowl to remove any lumps.
- For the custard into a serving dish or individual ramekins.
- Sprinkle a pinch of ground cinnamon on top of the custard.
- Let the custard cool to room temperature, then refrigerate for at least 2 hours before serving.
