- 15 ml soy sauce
- 10 ml rice vinegar
- 5 ml sesame oil toasted
- 10 ml mirin sweet rice wine
- 5 g sugar granulated
- 2 g grated fresh ginger root
- 1 piece garlic clove minced

- Peel and finely mince 1 garlic clove and add it to the bowl.
- Whisk all ingredients together thoroughly until sugar dissolves and dressing is well combined.
- Taste the dressing and adjust sweetness or acidity by adding more sugar or vinegar if desired.
- Serve the dressing immediately over salad or store in refrigerator for up to 3 days.
