  • 1500 g whole goose ready to roast
  • 50 g onion medium diced
  • 30 g celery stalk diced
  • 5 g fresh sage leaves chopped
  • 3 g fresh thyme leaves chopped
  • 5 g fresh parsley chopped
  • 80 g white bread cubes
  • 20 g unsalted butter
  • 50 ml chicken broth low sodium
  • 1 piece garlic clove minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper ground

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. Rinse the whole goose under cold water and pat dry with paper towels.
  3. Season the goose inside and out with salt and ground black pepper.
  4. In a skillet, melt unsalted butter over medium heat.
  5. Add diced onion, diced celery, and minced garlic clove to the skillet and cook until softened, about 5 minutes.
  6. Remove skillet from heat and stir in chopped fresh sage, thyme, parsley, and white bread cubes.
  7. Add chicken broth to the bread mixture and stir until moistened to make the stuffing.
  8. Loosely fill the cavity of the goose with the stuffing mixture.
  9. Place the goose breast side up on a rack in a roasting pan.
  10. Roast the goose in the preheated oven for about 2 hours, basting occasionally with pan juices.
  11. Check the internal temperature of the goose; it should reach 75 degrees Celsius (165 degrees Fahrenheit).
  12. Remove the goose from the oven and let it rest for 15 minutes before carving.
