- 50 ml water
- 50 ml light corn syrup
- 1 teaspoon lemon juice fresh
- 2 teaspoon red food coloring
- 1 teaspoon peppermint extract

- Combine granulated white sugar, water, and light corn syrup in a medium heavy-bottomed saucepan.
- Place the saucepan over medium heat and stir gently until the sugar dissolves completely.
- Attach a candy thermometer to the saucepan, making sure it does not touch the bottom.
- Allow the mixture to boil without stirring until it reaches 150 degrees Celsius (hard crack stage).
- Remove the saucepan from heat immediately once the temperature is reached.
- Stir in fresh lemon juice, red food coloring, and peppermint extract quickly and carefully.
- For the hot candy mixture onto a greased marble slab or a silicone mat to cool slightly.
- When the candy is cool enough to handle but still pliable, pull and fold the candy repeatedly to incorporate air and create a glossy texture.
- Stretch the candy into long thin ropes and cut into sticks of desired length.
- Allow the candy sticks to cool completely and harden before serving or storing in an airtight container.
