- 150 g skinless chicken breast
- 70 g rice noodles (dry)
- 0.5 piece onion medium peeled
- 1 piece ginger piece 5 cm peeled
- 2 piece garlic clove peeled
- 2 piece star anise
- 1 piece cinnamon stick
- 3 piece cloves whole
- 2 piece cardamom pod
- 15 ml fish sauce
- 5 g rock sugar
- 600 ml water
- 1 piece spring onion chopped
- 5 g fresh coriander leaves
- 1 piece lime wedge
- 30 g bean sprouts fresh
- 1 piece red chili sliced

Instructions
- Peel and halve the onion and ginger piece.
- Char the onion halves and ginger piece in a dry pan over medium heat until blackened on the surface, about 5 minutes.
- Place the chicken breast in a large pot and add 600 ml of water.
- Add the charred onion, ginger, star anise, cinnamon stick, cloves, and cardamom pods to the pot.
- Bring to a boil, then reduce heat to low and simmer gently for 30 minutes.
- Remove the chicken breast from the broth and set aside to cool.
- Strain the broth through a fine sieve into another pot to remove solids.
- Add fish sauce and rock sugar to the broth and stir until sugar dissolves.
- Soak the rice noodles in warm water for 20 minutes or until soft, then drain.
- Thinly slice the cooled chicken breast against the grain.
- Divide the softened noodles into a serving bowl.
- Top noodles with sliced chicken breast, chopped spring onion, coriander leaves, bean sprouts, and sliced red chili.
- Ladle hot broth over the noodles and chicken to warm everything through.
- Serve immediately with lime wedges on the side for squeezing over the pho.
