- 150 g white pollock fillet skinless
- 80 g button mushrooms sliced
- 15 g unsalted butter
- 1 piece garlic clove minced
- 50 ml dry white wine
- 60 ml heavy cream
- 5 g fresh parsley chopped
- 1 pinch salt
- 1 pinch black pepper ground
- 10 ml olive oil extra virgin

- Pat dry the white pollock fillet with paper towels and season both sides with salt and ground black pepper.
- Heat olive oil in a nonstick skillet over medium heat until shimmering.
- Place the pollock fillet in the skillet and cook for 3 minutes on one side without moving it.
- Flip the fillet carefully and cook for another 2 minutes until cooked through and lightly golden. Remove the fillet from the skillet and set aside on a warm plate.
- In the same skillet, add unsalted butter and let it melt over medium heat.
- Add minced garlic clove and sliced button mushrooms to the skillet and cook, stirring occasionally, until mushrooms are soft and golden, about 5 minutes.
- For dry white wine into the skillet and let it simmer for 2 minutes to reduce slightly.
- Add heavy cream to the skillet and stir to combine with the mushrooms and wine. Let the sauce simmer gently for 3 minutes until it thickens slightly.
- Return the cooked pollock fillet to the skillet and spoon the creamy mushroom sauce over it. Heat for 1 minute to warm through.
- Sprinkle chopped fresh parsley over the dish before serving.
