- 200 g pork cheek trimmed
- 50 g carrot peeled and sliced
- 40 g onion diced
- 1 piece garlic clove minced
- 50 ml dry white wine
- 100 ml chicken broth low sodium
- 1 tablespoon olive oil extra virgin
- 1 piece fresh thyme sprig
- 1 piece bay leaf dried
- 1 pinch salt fine
- 1 pinch black pepper ground

Instructions
- Preheat the oven to 150 degrees Celsius (300 Fahrenheit).
- Heat olive oil in an oven-safe pan over medium heat.
- Season pork cheeks with salt and black pepper on all sides.
- Brown pork cheeks in the pan until golden on each side, about 3 minutes per side.
- Remove pork cheeks and set aside.
- Add diced onion, sliced carrot, and minced garlic to the pan and cook until softened, about 5 minutes.
- For in dry white wine and simmer for 2 minutes to reduce slightly.
- Add chicken broth, fresh thyme sprig, and bay leaf to the pan.
- Return pork cheeks to the pan, cover with a lid or foil.
- Place the pan in the preheated oven and bake for 2 to 2.5 hours until pork cheeks are very tender.
- Remove pork cheeks and vegetables from the pan and keep warm.
- Strain the cooking liquid and reduce it on the stove over medium heat until slightly thickened.
- Serve pork cheeks with the reduced sauce spooned over.
