- 200 g rabbit leg skinless
- 15 g unsalted butter
- 10 g brown sugar
- 1 piece garlic clove minced
- 1 piece fresh thyme sprig
- 15 ml soy sauce
- 1 pinch black pepper ground
- 1 pinch sea salt

- Pat the rabbit leg dry with paper towels to remove excess moisture.
- Season the rabbit leg evenly with sea salt and ground black pepper on all sides.
- Heat unsalted butter in a medium skillet over medium heat until melted and foamy.
- Add the minced garlic clove and fresh thyme sprig to the skillet and cook for 1 minute until fragrant.
- Place the rabbit leg in the skillet and sear for 4 minutes on each side until golden brown.
- Sprinkle the brown sugar evenly over the rabbit leg and allow it to melt and caramelize, about 2 minutes.
- For the soy sauce over the rabbit leg and reduce heat to low, spooning the glaze over the meat.
- Cover the skillet and simmer gently for 10 minutes until the rabbit is cooked through and tender.
- Remove the thyme sprig and discard. Let the rabbit rest for 5 minutes before serving.
