- 100 g red bell pepper diced
- 150 g ripe tomato chopped
- 50 g onion diced
- 1 piece garlic clove minced
- 5 g fresh ginger minced
- 15 ml vegetable oil
- 1 teaspoon curry powder
- 0.5 teaspoon ground cumin
- 0.5 teaspoon ground coriander
- 0.5 teaspoon chili powder
- 0.5 teaspoon salt
- 100 ml water

Instructions
- Heat vegetable oil in a saucepan over medium heat.
- Add diced onion and cook until translucent, about 5 minutes.
- Add minced garlic and minced fresh ginger; cook for 1 minute until fragrant.
- Add diced red bell pepper and chopped ripe tomato; stir well.
- Add curry powder, ground cumin, ground coriander, chili powder, and salt; stir to coat vegetables.
- For in water and bring to a simmer.
- Reduce heat to low and cook uncovered for 15 minutes, stirring occasionally, until sauce thickens.
- Use an immersion blender to puree the sauce until smooth, or transfer to a blender and puree carefully.
- Taste and adjust seasoning if needed, then serve warm.
