  • 150 g fresh corn cob grilled and kernels removed
  • 100 g canned black beans drained and rinsed
  • 50 g red bell pepper diced
  • 30 g red onion finely diced
  • 10 g fresh cilantro chopped
  • 15 ml lime juice fresh
  • 10 ml olive oil extra virgin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper ground

  1. Preheat a grill or grill pan to medium-high heat.
  2. Place the fresh corn cobs on the grill and cook for about 10 minutes, turning occasionally until charred and cooked through.
  3. Remove the corn from the grill and let it cool slightly.
  4. Using a sharp knife, cut the kernels off the grilled corn cobs and place them in a mixing bowl.
  5. Add the drained and rinsed black beans to the bowl with the corn kernels.
  6. Dice the red bell pepper and finely dice the red onion, then add both to the bowl.
  7. Chop the fresh cilantro and add it to the mixture.
