- 100 g fresh sea scallops raw
- 50 g mixed salad greens washed
- 30 g cucumber peeled sliced
- 40 g cherry tomatoes halved
- 10 ml extra virgin olive oil
- 5 ml fresh lemon juice
- 1 pinch sea salt pinch
- 1 pinch black pepper ground pinch
- 2 g fresh parsley chopped

Instructions
- Rinse the fresh sea scallops under cold water and pat dry with paper towels.
- Heat a nonstick skillet over medium-high heat and add 5 ml of extra virgin olive oil.
- Place the scallops in the skillet and sear for 1.5 minutes on each side until golden and opaque inside.
- Remove scallops from the skillet and let them cool slightly.
- In a large bowl, combine mixed salad greens, sliced cucumber, and halved cherry tomatoes.
- In a small bowl, whisk together remaining 5 ml olive oil, fresh lemon juice, sea salt, and ground black pepper to make the dressing.
- For the dressing over the salad and toss gently to coat all ingredients evenly.
- Slice the seared scallops into bite-sized pieces and arrange them on top of the salad.
- Sprinkle chopped fresh parsley over the salad for garnish.
- Serve immediately to enjoy the freshness and crispness of the salad.
