  • 125 g ground beef lean
  • 50 g yellow onion diced
  • 1 piece garlic clove minced
  • 40 g red bell pepper diced
  • 60 g black beans canned drained
  • 50 g corn kernels canned drained
  • 100 g diced tomatoes canned
  • 150 ml beef broth low sodium
  • 1 tablespoon taco seasoning mix
  • 1 tablespoon olive oil extra virgin

Instructions

  1. Turn on the Instant Pot to saute mode and heat the olive oil.
  2. Add the diced yellow onion and minced garlic clove to the pot and cook until softened, about 3 minutes.
  3. Add the ground beef lean to the pot and cook until browned, breaking it up with a spoon.
  4. Add the diced red bell pepper and cook for 2 minutes with the beef and onions.
  5. Stir in the taco seasoning mix and cook for 1 minute to release the flavors.
  6. Add the canned diced tomatoes, black beans drained, corn kernels drained, and beef broth to the pot.
  7. Close the Instant Pot lid and set the valve to sealing position.
  8. Set the Instant Pot to manual high pressure for 10 minutes.
  9. When cooking is complete, carefully quick release the pressure by turning the valve to venting.
  10. Open the lid and stir the soup well before serving.
