- 125 g ground beef lean
- 50 g yellow onion diced
- 1 piece garlic clove minced
- 40 g red bell pepper diced
- 60 g black beans canned drained
- 50 g corn kernels canned drained
- 100 g diced tomatoes canned
- 150 ml beef broth low sodium
- 1 tablespoon taco seasoning mix
- 1 tablespoon olive oil extra virgin

Instructions
- Turn on the Instant Pot to saute mode and heat the olive oil.
- Add the diced yellow onion and minced garlic clove to the pot and cook until softened, about 3 minutes.
- Add the ground beef lean to the pot and cook until browned, breaking it up with a spoon.
- Add the diced red bell pepper and cook for 2 minutes with the beef and onions.
- Stir in the taco seasoning mix and cook for 1 minute to release the flavors.
- Add the canned diced tomatoes, black beans drained, corn kernels drained, and beef broth to the pot.
- Close the Instant Pot lid and set the valve to sealing position.
- Set the Instant Pot to manual high pressure for 10 minutes.
- When cooking is complete, carefully quick release the pressure by turning the valve to venting.
- Open the lid and stir the soup well before serving.
