- 200 g beef roast (sirloin tip)
- 1 tablespoon black peppercorns crushed
- 1 teaspoon kosher salt
- 1 tablespoon olive oil extra virgin
- 1 piece garlic clove minced
- 1 teaspoon fresh rosemary chopped

Instructions
- Preheat oven to 220 C (425 F).
- Pat beef roast dry with paper towels.
- Mix crushed black peppercorns and kosher salt in a small bowl.
- Rub olive oil evenly over the beef roast surface.
- Press the pepper and salt mixture onto all sides of the beef roast.
- Place minced garlic and chopped rosemary on top of the roast and press lightly.
- Put the roast on a rack in a roasting pan.
- Roast in the preheated oven for 15 minutes to sear the outside.
- Reduce oven temperature to 160 C (320 F) and continue roasting for 20 minutes for medium rare.
- Remove roast from oven and cover loosely with foil.
- Let the roast rest for 10 minutes before slicing thinly against the grain.
