- 150 g skinless chicken thigh
- 75 g long grain white rice uncooked
- 180 ml chicken broth low sodium
- 50 g yellow onion diced
- 1 piece garlic clove minced
- 1 tablespoon olive oil extra virgin
- 0.5 teaspoon paprika ground
- 0.25 teaspoon dried thyme
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper ground
- 5 g fresh parsley chopped

Instructions
- Heat olive oil in a large skillet over medium heat.
- Season skinless chicken thighs with salt, black pepper, paprika, and dried thyme.
- Place chicken thighs skin side down in the skillet and cook for 5 minutes without moving to get crispy skin.
- Flip chicken thighs and cook for another 3 minutes until browned.
- Remove chicken from skillet and set aside.
- Add diced yellow onion and minced garlic to the skillet and cook for 2 minutes until softened.
- Add uncooked long grain white rice to the skillet and stir to coat with oil and onion mixture.
- For in chicken broth and stir to combine.
- Return chicken thighs to the skillet, placing them on top of the rice.
- Bring to a boil, then reduce heat to low and cover the skillet with a lid.
- Simmer for 20 minutes until rice is cooked and chicken is fully cooked through.
- Remove from heat and let rest covered for 5 minutes.
- Sprinkle chopped fresh parsley over the dish before serving.
