- 1 piece red bell pepper medium
- 120 g ground beef lean
- 30 g white onion diced
- 1 piece garlic clove minced
- 50 g cooked white rice
- 60 ml tomato sauce plain
- 1 tablespoon olive oil extra virgin
- 0.5 teaspoon dried oregano
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper ground

Instructions
- Cut the top off the red bell pepper and remove seeds and membranes carefully.
- Turn the Instant Pot to saute mode and heat olive oil until shimmering.
- Add diced white onion and minced garlic clove to the pot and cook until softened, about 3 minutes.
- Add ground beef lean to the pot and cook until browned, breaking it up with a spoon.
- Stir in cooked white rice, tomato sauce, dried oregano, salt, and black pepper; mix well.
- Fill the hollowed red bell pepper with the beef and rice mixture, pressing gently to pack.
- Place the stuffed pepper upright on the trivet inside the Instant Pot.
- Add 250 ml of water to the bottom of the Instant Pot.
- Close the lid and set the valve to sealing position.
- Cook on manual high pressure for 10 minutes.
- Allow natural pressure release for 5 minutes, then quick release remaining pressure.
- Carefully remove the stuffed pepper from the pot and serve hot.
