  • 200 g rutabaga peeled and diced
  • 100 g carrot peeled and sliced
  • 70 g yellow onion diced
  • 1 piece garlic clove minced
  • 250 ml beef broth low sodium
  • 1 tablespoon tomato paste
  • 1 tablespoon olive oil extra virgin
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary crushed
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper ground

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced yellow onion and minced garlic clove to the pot and cook until softened, about 3 minutes.
  3. Add lean ground beef to the pot and cook until browned, breaking it apart with a spoon.
  4. Stir in tomato paste, dried thyme, and dried rosemary crushed, cooking for 1 minute to release flavors.
  5. Add diced rutabaga and sliced carrot to the pot and stir to combine.
