  • 150 g ground beef (lean)
  • 50 g red bell pepper diced
  • 40 g yellow onion diced
  • 1 piece garlic clove minced
  • 60 g black beans canned drained and rinsed
  • 80 g diced tomatoes canned
  • 1 tablespoon taco seasoning mix
  • 1 tablespoon olive oil
  • 30 g shredded cheddar cheese
  • 5 g fresh cilantro chopped
  • 1 piece lime wedge

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced yellow onion and minced garlic clove to the skillet and cook until softened, about 3 minutes.
  3. Add ground beef (lean) to the skillet and cook until browned, breaking it apart with a spatula.
  4. Stir in diced red bell pepper and cook for 2 minutes.
  5. Add taco seasoning mix and stir well to coat the meat and vegetables.
  6. Add black beans canned drained and rinsed and diced tomatoes canned to the skillet, stir to combine.
  7. Reduce heat to low and simmer for 5 minutes to blend flavors.
  8. Sprinkle shredded cheddar cheese evenly over the skillet and cover until cheese melts, about 2 minutes.
  9. Remove from heat and garnish with fresh cilantro chopped and a squeeze of lime wedge before serving.
