  • 50 g celery stalk diced
  • 80 g yellow onion diced
  • 1 piece garlic clove minced
  • 15 g tomato paste
  • 250 ml beef broth low sodium
  • 50 ml red wine dry
  • 1 piece fresh thyme sprig
  • 1 piece bay leaf dried
  • 1 tablespoon olive oil extra virgin
  • 1 tablespoon all purpose flour
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Heat olive oil in a heavy pot over medium heat.
  2. Add diced venison shoulder and brown on all sides, about 5 minutes.
  3. Remove venison and set aside.
  4. Add diced yellow onion, carrot, and celery to the pot and cook until softened, about 5 minutes.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Sprinkle all purpose flour over vegetables and stir well to coat, cooking for 2 minutes.
