  • 100 g all-purpose flour
  • 50 g unsalted butter chilled and diced
  • 25 g granulated sugar
  • 1 piece egg yolk
  • 5 g instant coffee powder
  • 100 ml heavy cream
  • 30 g granulated sugar for filling
  • 1 piece egg whole
  • 20 g unsalted butter softened
  • 0.5 teaspoon vanilla extract

  1. Preheat the oven to 180 degrees Celsius (350 Fahrenheit).
  2. In a mixing bowl, combine all-purpose flour and granulated sugar for crust.
  3. Add chilled diced unsalted butter to the flour mixture and rub with fingertips until mixture resembles coarse crumbs.
  4. Add egg yolk and mix gently to form a dough ball without overworking.
  5. Wrap dough in plastic wrap and refrigerate for 30 minutes.
  6. Roll out chilled dough on a lightly floured surface to fit a 15 cm tart pan.
  7. Press dough evenly into the tart pan and prick the base with a fork.
  8. Bake tart shell in preheated oven for 12 minutes until lightly golden.
  9. In a small bowl, dissolve instant coffee powder in heavy cream.
  10. In another bowl, whisk whole egg with granulated sugar for filling until pale and creamy.
  11. Add coffee cream mixture, softened unsalted butter, and vanilla extract to the egg mixture and whisk until smooth.
  12. For coffee filling into the baked tart shell.
  13. Bake tart for 20 minutes until filling is set but slightly wobbly in the center.
  14. Remove tart from oven and let cool completely before serving.
