- 100 g imitation crab sticks shredded
- 80 g cucumber peeled and thinly sliced
- 30 g carrot peeled and julienned
- 15 g green onion thinly sliced
- 5 g fresh cilantro leaves chopped
- 15 ml rice vinegar
- 10 ml soy sauce low sodium
- 5 ml sesame oil toasted
- 5 ml honey
- 2 g fresh ginger grated
- 1 piece garlic clove minced
- 1 pinch red chili flakes
- 5 g toasted sesame seeds

- Peel the cucumber and slice it thinly into rounds or half-moons.
- Peel the carrot and cut it into thin julienne strips.
- Thinly slice the green onion and chop the fresh cilantro leaves.
- In a small bowl, combine rice vinegar, low sodium soy sauce, toasted sesame oil, honey, grated fresh ginger, minced garlic clove, and a pinch of red chili flakes. Whisk well to make the dressing.
- Shred the imitation crab sticks into bite-sized pieces.
- In a large bowl, add the sliced cucumber, julienned carrot, shredded crab, green onion, and chopped cilantro.
- For the dressing over the salad ingredients and toss gently to combine all flavors evenly.
- Sprinkle toasted sesame seeds on top as a garnish before serving.
