- 15 g unsalted butter
- 1 piece garlic clove minced
- 1 piece fresh rosemary sprig
- 100 ml chicken broth low sodium
- 50 g carrot peeled sliced
- 30 g celery stalk sliced
- 50 g onion diced
- 10 ml olive oil extra virgin
- 1 teaspoon salt kosher
- 0.5 teaspoon black pepper ground

- Preheat oven to 175 degrees Celsius (350 Fahrenheit).
- Pat dry the skinless turkey breast piece with paper towels.
- Season turkey breast evenly with kosher salt and ground black pepper on all sides.
- Heat extra virgin olive oil in a Dutch oven over medium heat on the stovetop.
- Add the turkey breast and sear each side until golden brown, about 3-4 minutes per side.
- Remove turkey breast and set aside on a plate.
- Add unsalted butter to the Dutch oven and melt.
- Add diced onion, sliced carrot, and sliced celery to the pot and cook until softened, about 5 minutes.
- Add minced garlic clove and cook for 1 minute until fragrant.
- For in low sodium chicken broth and scrape the bottom of the pot to loosen browned bits.
- Return the turkey breast to the Dutch oven and place fresh rosemary sprig on top.
- Cover the Dutch oven with its lid and transfer to the preheated oven.
- Bake for 45 minutes or until the internal temperature of the turkey reaches 74 degrees Celsius (165 Fahrenheit).
- Remove from oven and let the turkey rest covered for 10 minutes before slicing.
- Serve turkey slices with the cooked vegetables and pan juices spooned over.
