- 1 piece zucchini medium sliced lengthwise
- 100 g ricotta cheese whole milk
- 50 g mozzarella cheese shredded
- 20 g parmesan cheese grated
- 0.5 piece egg large beaten
- 1 piece garlic clove minced
- 100 ml tomato sauce homemade or store-bought
- 1 tablespoon olive oil extra virgin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper ground
- 0.25 teaspoon dried oregano

Instructions
- Preheat oven to 190 degrees Celsius (375 degrees Fahrenheit).
- Slice zucchini lengthwise into thin strips about 1/8 inch thick using a knife or mandoline.
- Lay zucchini slices on paper towels and sprinkle lightly with salt to draw out moisture; let sit 10 minutes.
- In a bowl, combine ricotta cheese, half of shredded mozzarella, grated parmesan, beaten egg, minced garlic, dried oregano, black pepper, and a pinch of salt; mix well.
- Pat zucchini slices dry with paper towels to remove excess moisture.
- Spread a thin layer of tomato sauce evenly on the bottom of a baking dish.
- Place a zucchini slice on a flat surface and spread about 2 tablespoons of the cheese mixture evenly over it.
- Carefully roll up the zucchini slice and place seam side down in the baking dish.
- Repeat with remaining zucchini slices and cheese mixture, arranging roll-ups side by side in the dish.
- Top the roll-ups with remaining tomato sauce and sprinkle with remaining shredded mozzarella and parmesan cheese.
- Drizzle olive oil over the top of the roll-ups.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- Remove foil and bake uncovered for an additional 10 minutes until cheese is bubbly and golden.
- Let the roll-ups rest for 5 minutes before serving.
