  • 100 g all purpose flour
  • 50 g unsalted butter chilled diced
  • 30 ml cold water
  • 1 pinch salt
  • 50 g onion diced
  • 10 g unsalted butter
  • 100 ml cream fresh
  • 1 piece eggs whole
  • 30 g gruyere cheese grated
  • 1 pinch salt
  • 1 pinch black pepper ground

Instructions

  1. In a bowl, mix all purpose flour and a pinch of salt.
  2. Add chilled diced unsalted butter to the flour and rub with fingers until mixture resembles coarse crumbs.
  3. Add cold water gradually and mix until dough forms a ball.
  4. Wrap dough in plastic wrap and refrigerate for 30 minutes.
  5. Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit).
  6. Roll out dough on a floured surface to fit a tart pan.
  7. Place dough in tart pan and prick base with a fork.
  8. Bake tart shell blind with baking weights or dried beans for 15 minutes.
  9. Remove weights and bake for another 5 minutes until golden.
  10. In a pan, melt unsalted butter and saute diced onion until soft and translucent.
  11. In a bowl, whisk together cream fresh and whole egg.
  12. Add grated gruyere cheese, sauteed onions, salt, and ground black pepper to the mixture and stir well.
  13. For filling into baked tart shell.
  14. Bake tart in oven for 25 minutes until filling is set and golden on top.
  15. Remove tart from oven and let cool slightly before serving.

  • Blind bake the tart shell to avoid sogginess.
  • Let the tart cool slightly before slicing for cleaner cuts.
