- 100 g carrot peeled and diced
- 100 g potato peeled and diced
- 80 g zucchini diced
- 10 g unsalted butter
- 30 g onion diced
- 300 ml vegetable broth low sodium
- 100 ml whole milk
- 30 g cheddar cheese shredded
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Wash and peel the carrot and potato, then dice them into small pieces.
- Wash the zucchini and dice it into small pieces.
- Dice the onion finely.
- In a medium pot, melt the unsalted butter over medium heat.
- Add the diced onion to the pot and cook until translucent, about 3 minutes.
- Add the diced carrot, potato, and zucchini to the pot and stir for 2 minutes.
- For in the vegetable broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes or until vegetables are tender.
- Use an immersion blender to puree the soup until smooth and creamy.
- Add the whole milk and shredded cheddar cheese to the soup and stir until cheese is melted.
- Season with salt and ground black pepper to taste.
- Serve the soup warm in a bowl, optionally garnished with a small sprinkle of extra cheese.
