  • 50 g yellow onion diced
  • 100 g potato peeled and diced
  • 250 ml low sodium vegetable broth
  • 100 ml whole milk
  • 5 g fresh parsley chopped
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Peel and dice the yellow onion into small pieces.
  2. Peel and dice the potato into small cubes for easy cooking.
  3. Mince the garlic cloves finely to release flavor.
  4. In a medium pot, melt the unsalted butter over medium heat.
  5. Add the diced onion to the pot and cook until translucent, about 5 minutes.
  6. Add the minced garlic and cook for 1 minute, stirring constantly to avoid burning.
  7. Add the diced potato to the pot and stir to combine with onion and garlic.
  8. For in the low sodium vegetable broth and bring to a boil.
  9. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  10. Use an immersion blender to puree the soup until smooth and creamy.
  11. Stir in the whole milk to add creaminess without heavy cream.
  12. Season with salt and ground black pepper to taste.
  13. Add chopped fresh parsley and stir well.
  14. Heat the soup gently for 2 minutes more without boiling.
