Instructions

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. Separate the egg whites from the yolks carefully into two large bowls.
  3. Beat the egg whites with a pinch of salt until stiff peaks form.
  4. In the bowl with egg yolks, add granulated sugar and vanilla extract, then whisk until pale and creamy.
  5. Gently fold the beaten egg whites into the egg yolk mixture in three additions, being careful not to deflate the batter.
  6. Sift the all-purpose flour over the mixture and fold it in gently until fully combined.
  7. Add the melted unsalted butter and fold it in gently to incorporate.
  8. For the batter into a greased and floured 20 cm (8 inch) round cake pan.
  9. Bake in the preheated oven for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  10. Remove the cake from the oven and let it cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
