- 200 g medium red potato
- 1 piece hard boiled egg chopped
- 30 g celery stalk diced
- 20 g red onion finely diced
- 30 g mayonnaise
- 15 g plain yogurt
- 5 teaspoon yellow mustard
- 5 ml white vinegar
- 1 pinch salt
- 1 pinch black pepper ground
- 2 g fresh parsley chopped

Instructions
- Wash the medium red potatoes thoroughly under cold water.
- Place the potatoes in a pot and cover with cold water by 2 inches.
- Bring the water to a boil over medium-high heat and cook the potatoes until tender when pierced with a fork, about 15-20 minutes.
- Drain the potatoes and let them cool completely.
- Peel the cooled potatoes and cut them into bite-sized cubes.
- In a large mixing bowl, combine the mayonnaise, plain yogurt, yellow mustard, white vinegar, salt, and ground black pepper.
- Add the diced celery, finely diced red onion, and chopped hard boiled egg to the bowl with the dressing.
