  • 150 g skinless chicken thigh
  • 50 g onion diced
  • 1 piece garlic clove minced
  • 15 g tomato paste
  • 15 ml olive oil
  • 1 teaspoon ground coriander seed
  • 1 teaspoon ground cumin seed
  • 0.5 teaspoon ground cinnamon
  • 5 g harissa paste
  • 100 ml water
  • 1 pinch salt
  • 1 pinch black pepper ground
  • 5 g fresh parsley chopped

Instructions

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add diced onion and minced garlic clove to the pan and cook until soft and translucent, about 5 minutes.
  3. Add skinless chicken thigh pieces to the pan and brown on all sides for about 5 minutes.
  4. Stir in tomato paste, ground coriander seed, ground cumin seed, ground cinnamon, and harissa paste; cook for 2 minutes to release aromas.
  5. For water into the pan and stir to combine all ingredients.
  6. Add a pinch of salt and ground black pepper, then bring the mixture to a simmer.
  7. Cover the pan and let it cook on low heat for 25 minutes until chicken is tender and sauce thickens.
  8. Remove the lid and cook for an additional 5 minutes to reduce the sauce slightly if needed.
  9. Sprinkle chopped fresh parsley over the dish before serving.
