- 150 g skinless chicken thigh
- 50 g onion diced
- 1 piece garlic clove minced
- 15 g tomato paste
- 15 ml olive oil
- 1 teaspoon ground coriander seed
- 1 teaspoon ground cumin seed
- 0.5 teaspoon ground cinnamon
- 5 g harissa paste
- 100 ml water
- 1 pinch salt
- 1 pinch black pepper ground
- 5 g fresh parsley chopped

Instructions
- Heat olive oil in a medium saucepan over medium heat.
- Add diced onion and minced garlic clove to the pan and cook until soft and translucent, about 5 minutes.
- Add skinless chicken thigh pieces to the pan and brown on all sides for about 5 minutes.
- Stir in tomato paste, ground coriander seed, ground cumin seed, ground cinnamon, and harissa paste; cook for 2 minutes to release aromas.
- For water into the pan and stir to combine all ingredients.
- Add a pinch of salt and ground black pepper, then bring the mixture to a simmer.
- Cover the pan and let it cook on low heat for 25 minutes until chicken is tender and sauce thickens.
- Remove the lid and cook for an additional 5 minutes to reduce the sauce slightly if needed.
- Sprinkle chopped fresh parsley over the dish before serving.
