  • 100 g masa harina (corn flour)
  • 70 ml warm water
  • 1 pinch salt
  • 15 ml vegetable oil
  • 50 g refried black beans (cooked)
  • 60 g shredded cooked chicken breast
  • 30 g grated white cheese (queso fresco style)
  • 5 g fresh cilantro leaves chopped
  • 1 piece lime wedge
  • 15 g onion diced
  • 20 g tomato diced

Instructions

  1. In a mixing bowl, combine masa harina and salt.
  2. Gradually add warm water to the masa harina while mixing with your hand until a soft dough forms.
  3. Divide the dough into a ball about 70g and flatten it into a 10 cm diameter thick disc using your palms or a tortilla press lined with plastic.
  4. Heat a non-stick skillet over medium heat and cook the dough disc for about 2 minutes on each side until lightly golden and cooked through.
  5. Remove the cooked gordita and let it cool slightly.
  6. Using a sharp knife, carefully slice the gordita horizontally to create a pocket without cutting all the way through.
  7. Heat vegetable oil in a small pan over medium heat.
  8. Lightly fry the gordita pockets in the oil for about 1 minute per side until slightly crispy, then drain on paper towels.
  9. Fill each gordita pocket with refried black beans, shredded cooked chicken breast, diced onion, diced tomato, grated white cheese, and chopped cilantro leaves.
  10. Serve the gordita warm with a lime wedge on the side for squeezing over before eating.
