  • 120 g skinless salmon fillet
  • 60 g cherry tomatoes halved
  • 50 g cucumber sliced
  • 20 g red onion thinly sliced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 0.5 teaspoon Dijon mustard
  • 0.5 teaspoon honey
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Preheat a nonstick skillet over medium heat.
  2. Season the skinless salmon fillet with salt and ground black pepper on both sides.
  3. Place the salmon fillet in the hot skillet and cook for 4 minutes on one side without moving it.
  4. Flip the salmon fillet carefully and cook for another 3 to 4 minutes until cooked through and slightly golden.
  5. Remove the salmon from the skillet and let it rest for 2 minutes.
  6. In a small bowl, whisk together fresh lemon juice, Dijon mustard, honey, and extra virgin olive oil until emulsified.
  7. Add a pinch of salt and ground black pepper to the dressing and mix well.
  8. In a large salad bowl, combine fresh baby spinach leaves, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.
  9. Flake the cooked salmon into large chunks and add to the salad bowl.
