  • 100 g ripe red tomato diced
  • 80 g red bell pepper diced
  • 80 g yellow bell pepper diced
  • 50 g onion diced
  • 1 piece garlic clove minced
  • 15 ml extra virgin olive oil
  • 50 ml water
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Heat olive oil in a medium skillet over medium heat.
  2. Add diced onion and minced garlic clove to the skillet and cook until onion is translucent, about 3 minutes.
  3. Add diced red and yellow bell peppers to the skillet and cook for 5 minutes, stirring occasionally.
  4. Add diced ripe red tomato and cook for another 3 minutes until the tomato softens.
  5. Add fresh green peas and water to the skillet, stir to combine.
  6. Season with salt and ground black pepper to taste.
  7. Cover the skillet and simmer on low heat for 10 minutes until peas are tender and flavors meld.
  8. Remove the lid and cook for 2 more minutes to reduce any excess liquid.
  9. Serve warm as a side dish or light main course.
