- 50 g all purpose flour
- 30 g unsalted butter
- 150 ml whole milk
- 1 piece garlic clove minced
- 1 piece egg whole
- 1 pinch salt
- 1 pinch black pepper ground
- 1 pinch nutmeg ground
- 15 g parmesan cheese grated

- Preheat oven to 180 degrees Celsius (350 Fahrenheit).
- In a bowl, mix all purpose flour and 20 g unsalted butter until crumbly to form tart dough.
- Press dough evenly into a small tart pan and prick base with fork.
- Bake tart shell for 10 minutes until lightly golden, then remove from oven.
- In a saucepan, melt remaining 10 g unsalted butter over medium heat.
- Add minced garlic clove and cook for 1 minute until fragrant, do not brown.
- Whisk in 1 tablespoon all purpose flour and cook for 1 minute to form roux.
- Gradually add whole milk while whisking continuously to avoid lumps.
- Cook sauce until thickened and creamy, about 5 minutes.
- Season bechamel sauce with salt, black pepper, and nutmeg ground.
- In a bowl, combine grated carrot, bechamel sauce, egg whole, and grated parmesan cheese.
- For carrot mixture into pre-baked tart shell and spread evenly.
- Bake tart for 25 minutes until filling is set and top is lightly golden.
- Remove tart from oven and let rest for 5 minutes before serving.
