  • 50 g all purpose flour
  • 30 g unsalted butter
  • 150 ml whole milk
  • 1 piece garlic clove minced
  • 1 piece egg whole
  • 1 pinch salt
  • 1 pinch black pepper ground
  • 1 pinch nutmeg ground
  • 15 g parmesan cheese grated

  1. Preheat oven to 180 degrees Celsius (350 Fahrenheit).
  2. In a bowl, mix all purpose flour and 20 g unsalted butter until crumbly to form tart dough.
  3. Press dough evenly into a small tart pan and prick base with fork.
  4. Bake tart shell for 10 minutes until lightly golden, then remove from oven.
  5. In a saucepan, melt remaining 10 g unsalted butter over medium heat.
  6. Add minced garlic clove and cook for 1 minute until fragrant, do not brown.
  7. Whisk in 1 tablespoon all purpose flour and cook for 1 minute to form roux.
  8. Gradually add whole milk while whisking continuously to avoid lumps.
  9. Cook sauce until thickened and creamy, about 5 minutes.
  10. Season bechamel sauce with salt, black pepper, and nutmeg ground.
  11. In a bowl, combine grated carrot, bechamel sauce, egg whole, and grated parmesan cheese.
  12. For carrot mixture into pre-baked tart shell and spread evenly.
  13. Bake tart for 25 minutes until filling is set and top is lightly golden.
  14. Remove tart from oven and let rest for 5 minutes before serving.
