- 150 g lean ground beef
- 50 g white button mushrooms sliced
- 40 g yellow onion diced
- 1 piece garlic clove minced
- 10 g unsalted butter
- 1 tablespoon all purpose flour
- 100 ml beef broth low sodium
- 30 g sour cream full fat
- 1 teaspoon dijon mustard
- 75 g egg noodles uncooked
- 1 tablespoon olive oil
- 1 pinch salt
- 1 pinch black pepper ground

- Bring a pot of salted water to a boil for the egg noodles.
- Cook egg noodles in boiling water according to package instructions until tender, about 7 minutes, then drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add diced yellow onion and minced garlic clove to the skillet and cook until softened, about 3 minutes.
- Add sliced white button mushrooms to the skillet and cook until they release moisture and become golden, about 5 minutes.
- Add lean ground beef to the skillet and cook until browned, breaking it up with a spoon, about 6 minutes.
- Sprinkle all purpose flour over the beef mixture and stir well to combine, cooking for 1 minute to remove raw flour taste.
