  • 50 g feta cheese crumbled
  • 30 g ricotta cheese
  • 5 g parsley fresh chopped
  • 15 g unsalted butter melted
  • 1 piece egg beaten
  • 0.25 teaspoon black pepper ground
  • 0.25 teaspoon salt

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. In a mixing bowl, combine crumbled feta cheese, ricotta cheese, chopped fresh parsley, beaten egg, ground black pepper, and salt. Mix well until evenly combined.
  3. Lay one sheet of phyllo dough flat on a clean surface and brush it lightly with melted unsalted butter.
  4. Place the second phyllo dough sheet on top of the first and brush it with melted butter as well.
  5. Cut the layered phyllo sheets into two equal rectangles.
  6. Place half of the cheese mixture along one edge of each rectangle.
  7. Roll the dough tightly over the filling to form a log shape, sealing the edges gently.
  8. Place the borek rolls on a baking sheet lined with parchment paper.
  9. Brush the tops with any remaining melted butter to help them brown.
  10. Bake in the preheated oven for 25 to 30 minutes or until golden brown and crisp.
  11. Remove from the oven and let cool for 5 minutes before serving.
